Blueberry Crumble
Blueberry Crumble
  1. Serves 6
  • Filling
  • 400g frozen blueberries 
  • 1 lemon zest 
  • 5 tbsp almond milk 
  • 1tsp cinnamon powder
  • 1tsp nutmeg 
  • 1 tsp vanilla extract 
  • 2 tbsp maple syrup 
  • 1/2 tbsp arrowroot powder
  • Topping
  • 100g rolled oats 
  • 2 tbsp maple syrup 
  • 2 tbsp coconut oil 
  • 75g almond flakes 
  • 1/2 tsp cinnamon powder 
  • TCC Blueberry layered yogurt  

 

Method:

1. Preheat the oven to 180 degrees.

2. Mix all of the filling ingredients together and place into the dish.

3. Mix together all of the topping ingredients except the yogurt and spoon evenly over the fruit. 

4. Bake for 20-25 minutes until the top is golden brown and the fruit is bubbling.

5. Let it cool for 5 minutes. 

6. Serve with TCC blueberry yogurt.
