Green Goddess Salad

A fresh and crunchy salad recipe from our friend Melissa (@she.wellthy). Serve it as it is or add grilled chicken, seared salmon or crispy tofu for a more complete meal.

Method

  1. Finely shred the cabbage and chop the romaine. Dice the cucumber and radishes. Slice the spring onions. Finely chop the herbs. Cube the avocado.
  2. Add coconut kefir, herbs, garlic, lemon juice, olive oil, salt, and pepper to a blender. Blend until smooth.
  3. Add cabbage, cucumber, radishes, spring onions, and herbs to a large bowl. Gently fold in the avocado. Pour over the dressing and mix until fully coated.
  4. Adjust seasoning if needed and serve immediately.

Salad:

2 cups green cabbage, very finely shredded
1 cup romaine, finely chopped
1 large cucumber, finely diced
1 avocado, small cubes
4–5 radishes, finely diced
2 spring onions, thinly sliced
1 large handful fresh herbs (parsley + dill + chives), finely chopped

2/3 cup Coconut Collab Coconut Kefir
1 packed cup fresh herbs (mostly parsley + dill, some chives)
1 small garlic clove
3 tbsp lemon juice
3 tbsp extra virgin olive oil
Salt, to taste
Black pepper, to taste
