Apple Overnight Oats

Method

  1. The night before serving, add the oats, 5 tbsp Coconut Collab Natural Coconut Yog, chia seeds to a medium sized bowl. Add 1 tsp agave to give it a little sweetness before mixing it all together. Set aside.
  2. Put the apples, remaining agave, lemon juice and cinnamon in a small pan with 1tbsp water. Cover and cook over a medium heat for 10-15 mins, or until the apples are tender when pierced with the tip of a knife.
  3. To assemble, layer the creamy overnight oats and the apple compote in a mason jar, reversing a tbsp of the jam for later.
  4. Once near the top, spoon the remaining Coconut Collab Natural Yoghurt on over the oats and decorate with a spoonful of compote. Sprinkle it with toasted nuts, chopped fresh apple and place in the fridge overnight. Enjoy!
