Chocolate Fudge Molten Puds

Bake an impressive dinner party dessert with minimum fuss – these chocolate puddings, also known as chocolate fondant or lava cake, have a lovely gooey centre

Method

  1. Brew your coffee and set aside
  2. Melt chocolate and butter together over a bain-marie and set aside
  3. Grease a deep tin muffin tray and preheat oven to 175c fan
  4. Combine the buttermilk (milk +lemon juice) with the melted chocolate, melted butter, brewed coffee, coconut yog, sugar and salt
  5. Sieve in the dry ingredients (flours, baking powder, baking soda and cocoa) and fold the mixture together until just combined
  6. Add  1-2tbsp of mixture to greased tin, then add 1.5tsp of a choc pot to the centre and cover with more batter (each well should be 3/4 full)
  7. Bake for  22-24mins
  8. Once cooled for 10mins stick a knife around the edges to loosen and tip upside down onto a cooling rack
  9. Top with (vegan) mini eggs and enjoy warm

110ml vegan buttermilk (110ml plant milk + 2 tsp lemon juice)
20g cocoa powder
110g plain flour
70g  white sugar
15g brown sugar
2/3 tsp baking powder
1/8 rounded tsp baking soda
pinch of salt
65g coconut yoghurt
50g vegan melted butter
50g melted dark chocolate
70ml brewed coffee (2heaped tsp instant coffee + 70ml hot water)
