Creamy Leek Gnocchi

You won’t believe how simple it is to whip up this creamy, dreamy crowd pleaser!

Method

  1. Start by washing and roughly chopping the leeks, char over a flame for a few minutes each side then chop into bite sized pieces and pop in a pot with a drizzle of olive oil
  2. After a few minutes of frying the charred leeks add chopped garlic squeezing in 1/2 lemon, in a separate pot bring water to boil before adding the gnocchi and cook for around 2 minutes, saving a ladle of the gnocchi water
  3. Add the gnocchi and a ladle of the gnocchi water to the pot with leeks and garlic, stir in the yogurt, heavily season with salt and pepper then add in the chopped fresh herbs
  4. Sprinkle over chilli flakes and taste test, adding a little more salt and pepper if needed

3 leeks
3 cloves of garlic
1/2 a lemon, squeezed
1 tsp chilli flakes
3 tbsp fresh chopped herbs (we went for fresh dill and chives)
Salt and pepper to taste
