Fabulous Strawberry Frappe

Method

  1. For the strawberry sauce, put all the ingredients in a medium saucepan. Cook over a medium-low heat for 10 minutes
  2. Blend until smooth with a stick blender or in a liquidiser.
  3. Leave to cool, then decant into a bowl and store in the fridge. For the Frap, pour 100 ml of the cream into a bowl and whip with a whisk until it holds its shape. Set aside.
  4. Put the remaining 50 ml of cream in a blender with the yoghurt, frozen strawberries, strawberry sauce and ice.
  5. Blend on high speed for 30 seconds, then pause and scrape down the sides. Blend for another 30 seconds.
  6. Drizzle a little strawberry sauce around the inside of your glass,
  7. Then pour in the frappuccino. Use the back of a spoon to swirl it with the sauce against the sides.
  8. Top with freshly whipped cream and enjoy!

Strawberry sauce
Makes about 500 ml (but can be stored in the fridge for future frappes!)
400 g fresh or frozen strawberries
75 g caster or granulated sugar
½ lemon, juiced
For the Frap
150ml The Coconut Collab double cream
175g The Coconut Collab natural yog
75g frozen strawberries
50ml strawberry sauce, plus extra for the glass
150g ice (about 8 cubes)
