Spooky Sandwich Cookies

BOO! Don’t be scared, these gorgeous spooky cookies are all treat, no trick!

Method

  1. Chop the vegan butter into small pieces, add to the sugar and vanilla in a large bowl and beat until creamy.
  2. Gradually add in the flour, baking powder, bicarbonate of soda and salt. Mix until combined.
  3. Add the M!lk – add more flour at this point if the mixture is too sticky.
  4. Once a dough is formed, add the chocolate chips and mix until distributed evenly.
  5. Divide into 85g portions, adding a few larger chunks on the top of the dough balls.
  6. Bake at 180 degrees (fan) for 12 minutes.
  7. Allow to cool, and then use 1 choc pot to fill each cookie sandwich. I used a mixture of the salted caramel and chocolate.
  8. Melt 200g of vegan white chocolate in a bowl over a bain-marie, on a low-medium heat. Add your food colouring.
  9. Once fully melted, turn off the heat and dip half the cookie sandwich in and decorate whilst still melty.
  10. In a clean bowl melt 200g of your darker chocolate on a low-medium heat.
  11. Once fully melted, turn off the heat and dip half the cookie sandwich in to coat.
  12. Allow the chocolate to cool at room temp, then refrigerate until it is set (don’t rush this part as you don’t want it to bloom)
  13. Once set, draw on your spider web to the darker chocolate cookies.
  14. Top with optional spider.

100g light brown sugar
75g caster sugar

325g plain flour
1 + 1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp sea salt
50ml Coconut Collab M!lk
100g vegan chocolate chips
100g vegan chocolate chunks for topping

Cookie sandwich filling:
6 Coconut collab choc pots

Cookie decoration:
200g vegan white chocolate
200g vegan milk/dark chocolate
Orange food colouring (without carmine)
Googly eyes
White decorating icing
