Tremendous Tomato Salad

This tangy tomato salad makes for the perfect dinner party side!

Method

  1. Tip the tomatoes, onion, peach and olive oil into a bowl and season well with salt and pepper.
  2. Tip the natural coconut yog into a blender with the basil. Blend into a chunky puree. Season to taste with salt and pepper.
  3. Toast the seeds in a dry frying pan for 1-2 minutes or until golden, shaking the pan regularly.
  4. When ready to serve, spoon the basil yog onto a serving platter then top with the tomatoes, peach and onion

450g Tomatoes, various sizes and colours, sliced

1 Small red onion, finely sliced

2 Ripe peaches, stoned and sliced

1 tbsp Extra Virgin Olive Oil

25g Basil leaves

Flaked Sea Salt and Pepper

1 tbsp mixed seeds, such as sunflower, pumpkin or flax
