Vegan Laksa

This Laksa can be whipped up in just 20 mins – perfect for a quick dinner or a fancy lunch!

Method

  1. Blend shallots, garlic cloves, chilli, lemongrass, ginger, coriander, tumeric, paprika and cumin in a food processor until you’re left with a paste.
  2. Heat the paste in a large pan for 3-5 minutes until fragrant.
  3. Add remaining laksa ingredients and gently simmer for about 10 minutes.
  4. Serve in two bowls with your noodles, greens, coriander and crispy shallots.

Laksa:
2tbsp Sesame Oil (or other liquid oil)
4 Shallots
4 Garlic Cloves
3 whole Red Chillis
2 Lemongrass Stalk (soft white stem)
30g Ginger
1tsp Ground Coriander
1tsp Tumeric
1tsp Paprika
1/2tsp Cumin
1litre Vegetable Broth
1/2 tub of The Coconut Collab Natural Yog
1tbsp Maple Syrup
Juice of one Lime
1/2tsp Salt

Serve with:
Rice Noodles cooked to packet instructions
Steamed Greens of your choice
Fresh Coriander
Crispy Shallots or chopped Nuts
