Mango Sticky Rice Sushi

Method

  1. Cook the rice according to the instructions on the package.
  2. Warm 1/3 cup coconut milk with a pinch of salt (don’t boil).
  3. Gently fold warm coconut milk into cooked rice, place in the fridge to cool.
  4. Warm 1/2 cup coconut milk and the double cream on low heat. Stir in maple syrup, vanilla and salt. Let cool slightly.
  5. Shape the rice into small bite-sized ovals with wet hands.
  6. Lightly dab a thin layer of the vanilla sauce on top of each rice bite, then place a thin mango slice over the rice bite. Top with sesame seeds and mint leaves.
  7. Chill the nigiri in the fridge until serving.
  8. Arrange the nigiri on a plate and serve with remaining vanilla-maple sauce on the side for dipping or drizzling.

200g (1 cup) Thai glutinous sticky rice

Assembly:
1 ripe mango, peeled and thinly sliced
