METHOD

Place all the ingredients in a food processor, blend on highest setting until smooth. The consistency should be like pancake batter.

Heat a large pan with a teaspoon of coconut oil, on a medium-high heat, spoon one pancake into the pan, cook for 1-2 min each side, then tip onto a plate.

Repeat the process with the remaining oil and batter.

Top the pancakes with blueberries and coconut yogurt.
