Method:

Put the oven to 200 degrees. Dry fry the mushrooms in a pan in batches until cooked.

In the same pan, heat up 1tbsp of olive oil, add the onions with a pinch of salt and cook for 2-3 minutes until translucent. Then add the sliced garlic and cook for another 2 minutes. Pour the whole jar of @boldbeanco Queen Chickpeas into the pan with 1-2tbsp of their bean stock. Leave to simmer.

Add the spinach. Then add The Coconut Collab Cr*me Fraiche, mustard and vegan cheese. Season well. Lastly add a squeeze of lemon and then pour the mixture into a ceramic dish. Top with more cheese and breadcrumbs mixed with olive oil.

Then place in the oven until browned (10-15 mins). Finally, sprinkle with chopped parsley and enjoy!
