Method:

Add the grated courgette to a large colander or sieve, toss with salt and set aside for 10mins.

In another mixing bowl add flour, baking powder, garlic, cumin, paprika and black pepper and mix with a whisk to remove any clumps. Set aside.

After 10mins, using your hands, squeeze as much water out of the courgette as you can. The more water you can remove the thicker the batter will be.

Add your courgette, The Coconut Collab Greek Style Yog and optional cheese to the flour mixture and stir together with a wooden spoon until you're left with a thick batter.

Heat your oil in a large frying pan over a medium heat. Drop heaped tablespoons of batter into the pan and flatten with the back of an oiled spoon. Fry for about 2mins each side, or until golden brown. Repeat until all the mixture is used up.

Serve with a large dollop of The Coconut Collab Greek Style Yog and garnish with freshly chopped chives or parsley.
