ICE CREAM SANDWICH

Method:

  • Preheat the oven to 180 degrees. Add a drizzle of olive oil to a pan followed by your crushed mixed nuts and stir together, allowing them to toast for a few minutes. After this, set them aside for later.

  • In a food processor, combine buckwheat flour, oats and process until broken down.

  • Add remaining ingredients and process until you get a dough.

  • Place the dough between two sheets of baking paper and press with a rolling pin until you get the thickness desired

  • Cut the round cookies using a cutter. Press the scraps of dough back into a new layer and cut more cookies.

  • Place the freezer or fridge up to 4 hours.

  • Sandwich the cookies together with The Coconut Collaborative Coconut and Vanilla Frozen Yogurt and tuck in!
