Ice Cream Sandwich
  1. Makes 6 cookies
  • Base:
  • 1 cup of buckwheat flour
  • 1 cup of oat
  • 1 cup shredded coconut
  • ¼ cacao powder
  • 4 tbspn cacao nibs
  • 2 cups of dates
  • 1 tsp vanilla extract
  • 2 cups of dates
  • ½ tsp salt
  • 1 Tub of Coconut & Vanilla Frozen Yogurt


1. In a food processor, combine buckwheat flour, oats and process until broken down.

2. Add remaining ingredients and process until you get a dough.

3. Place the dough between two sheets of baking paper and press with a rolling pin until you get the thickness desired

4. Cut the round cookies using a cutter. Press the scraps of dough back into a new layer and cut more cookies.

5. Place the freezer or fridge up to 4 hours.

6. Sandwich the cookies together with The Coconut Collaborative Coconut and Vanilla Frozen Yogurt and tuck in!
