Method:

Combine all ingredients in a large mixing bowl. Stir until left with a soft dough consistency.

Roll 1/4c of potato into a ball with hands, then flatten and press into a pancake shape. Repeat until all the mixture is used. Note: If the mixture is too sticky or crumbly to roll into a ball, add more potato or a little mi*lk.

Heat a knob of vegan butter or oil in a large frying pan and add the potato pancakes. Cook for 2-3 minutes each side until the bottoms are a deep golden brown.

Remove from the pan and repeat until all the potato pancakes have been cooks.

Serve with a generous dollop of The Coconut Collab Cr*me Faiche and freshly chopped spring onions.
