Method:

Place coconut, oats and cashews into a food processor or blender until left with a fine crumb, then transfer into a mixing bowl.

Add all remaining ingredients and mix until well combined and it forms a ball.

Take a heaped tablespoon of mixture, roll into a ball and put on a plate lined with baking paper, then repeat until all the mixture is used.

Place in the fridge to set and store in an airtight container in the fridge.
