Method:

Heat the olive oil and cook the onions until soft.

Add the Garlic, Paprika and Chilli Flakes then cook for 1 minute. On a high heat, add the mushrooms stirring often until softened.

Pour in the Vegetable stock and bring to the boil until the sauce thickens.

Turn off the heat and stir in The Coconut Collaborative Cr*me Fraiche and a handful of Parsley.

Follow pack instructions to cook the rice.

Serve all together with the remaining parsley and an additional dollop of The Coconut Collaborative Cr*me Fraiche on top.
