Method:

Blanch the carrots in boiling water for 2-3 minutes until just tender. Place immediately in a bowl of iced water
- Mix together all the marinade ingredients for the carrot with good pinch of salt, then gently add the carrots into the mix with your hands. Cover and refrigerate until you’re ready to use, allowing them to infuse
- To make the batter for the waffles first mix the dry ingredients (except the spring onions) with a good pinch of salt. In another bowl, mix the wet ingredients.
- Fold the dry ingredients into the wet ingredients before adding the spring onions and mix until just combined.
- Heat your waffle iron and once hot add in about 1-2 tbsp of the batter at a time (depending on the size of your iron). Cook for 3-5 minutes until golden brown.
- Top your waffles with the marinated carrot, some more yoghurt, sliced avocado, dill and capers. Enjoy!
