Method:
- Chop the vegan butter into small pieces, add to the sugar and vanilla in a large bowl and beat until creamy.
- Gradually add in the flour, baking powder, bicarbonate of soda and salt. Mix until combined.
- Add the M!lk - add more flour at this point if the mixture is too sticky.
- Once a dough is formed, add the chocolate chips and mix until distributed evenly.
- Divide into 85g portions, adding a few larger chunks on the top of the dough balls.
- Bake at 180 degrees (fan) for 12 minutes.
- Allow to cool, and then use 1 choc pot to fill each cookie sandwich. I used a mixture of the salted caramel and chocolate.
- Melt 200g of vegan white chocolate in a bowl over a bain-marie, on a low-medium heat. Add your food colouring.
- Once fully melted, turn off the heat and dip half the cookie sandwich in and decorate whilst still melty.
- In a clean bowl melt 200g of your darker chocolate on a low-medium heat.
- Once fully melted, turn off the heat and dip half the cookie sandwich in to coat.
- Allow the chocolate to cool at room temp, then refrigerate until it is set (don't rush this part as you don't want it to bloom)
- Once set, draw on your spider web to the darker chocolate cookies.
- Top with optional spider.
