VANILLA YOG CHOC CHIP MUFFINS

Method:

  • Preheat the oven to 175°C fan/190°C conventional. Grease a muffin tin using coconut oil. Set aside

  • Mix the plant m*lk with the apple cider vinegar in a bowl and set aside.

  • In a separate large bowl mix the flour, baking powder, bicarbonate of soda and salt.

  • In another bowl mix The Coconut Collab Vanilla Yoghurt, sugar and oil. 

  • Add the yogurt mix and the milk vinegar to the dry ingredients and stir until combined, be sure not over mix! Add the chocolate chips.

  • Pour the mixture into the oiled muffin tins and pop into the oven. Bake for about 18 - 23 minutes or until the top of the muffins are golden and a toothpick comes out clean.

  • Once baked, take the muffins out of the oven and let them cool before taking out of the tins (around 10 minutes). Tuck in and enjoy!
