Method:

Blend shallots, garlic cloves, chilli, lemongrass, ginger, coriander, tumeric, paprika and cumin in a food processor until you're left with a paste.

Heat the paste in a large pan for 3-5 minutes until fragrant.

Add remaining laksa ingredients and gently simmer for about 10 minutes.

Serve in two bowls with your noodles, greens, coriander and crispy shallots.
