Vegan Laksa

Method:

  • Blend shallots, garlic cloves, chilli, lemongrass, ginger, coriander, tumeric, paprika and cumin in a food processor until you're left with a paste.

  • Heat the paste in a large pan for 3-5 minutes until fragrant.

  • Add remaining laksa ingredients and gently simmer for about 10 minutes. 

  • Serve in two bowls with your noodles, greens, coriander and crispy shallots.
